This week’s Lactofree Ambassadairy challenge was American style pancakes. Now I love pancakes but usually go for my protein pancakes or, if I am feeling naughty, the amazing Nigella’s banana buttermilk pancakes. So when asked to come up with another pancake recipe I have to admit I struggled. Why mess with something that already works? To help me along I bought a bag of coconut flour which, is something I have wanted to play with for ages. Low in digestible carbohydrates coconut flour also has 4 grams of protein and 8 grams of fibre per 18 gram serving. I’ve heard lots of horror stories about it being really difficult to work with as it really does soak up liquid quickly! I think I cracked it though with these American pancakes which was also lactose free.
Ingredients – Serves 2
3 large eggs
1 teaspoon vanilla extract
1 tablespoon of agave syrup
1 tablespoon cacao nibs
300ml Lactofree whole milk
100g coconut flour
butter for frying
Whisk the eggs with an electric whisk until they are light, fluffy and airy. Add the other ‘wet’ ingredients and whisk until combined. Add the rest of the ingredients and stir until smooth.
Melt the butter in a large frying pan and add a tablespoon of the mixture, squashing slightly with the back of a spoon. Fry until golden brown and flip. When golden brown on both sides, serve.
